I expect soon that there will be some regulation demanding the source continues to flow into the river for use for all downstream.
Our puit de source is piped from several regards to the house and farm buildings, with a holding tank underground, just above the house (we're built into a hill). The overflow runs into a concrete trough (probably the old "wash-room"!), then goes under the road and finds it's way towards the river that flanks our lower boundary. So, yes, what we don't use goes on to the water table - there is no tap to turn the overflow off!
