If I have my facts right I think the following is correct, I have 3 rooms that I wish to have HD receivers in so I take it that I can put a six outlet LNB, on the dish and run 2 cables to each room??

Yep, correct as far as I'm aware.
I've got 2 Humax HD boxes & a 4 way LNB.

6 way seem o be a bit thin on the ground, so an 8 way and plastic caps over the other 2? When it says receiving for TNT, Canal and all the other french platforms, does that have any bearing if I am pointing it at the Astra satellite, in other words it will pick up UK channels.

It will pick up the UK channels if pointed at Astra 2E/2F/2G at 28.3°E
