S1 and EHIC
Although I'm now on an S1, can I still use my EHIC card issued by CPAM when I go to Spain. It's in date

With a registered S1, your health provider is now the UK.
If you look on AMELI I think you will see you are no longer entitled to a Carte européenne d'assurance maladie (CEAM) so your card is probably no longer valid. You could check at your local social security office?
You should apply for EHI/GHIC from the UK. It is possible to get provisional cover.
The countries covered by EHIC/GHIC are different from those covered by CEAM

I've applied, but as I need it from 8 July I think I'll apply for the provisional one too.

You have little or no chance of getting a GHIC card before July 8th. so to avoid potentially confusing the system and getting neither I'd stick to applying for the temporary one for now and save the card application for later.

I'd apply for the GHIC cos at least you will be seen in the system as having registered for the card even if you haven't received the card.

I tried to get the provisional certificate but it said as I live in France I have to phone them.
I don't think I'll bother, I'll take my French card with me as it hasn't expired and hope I won't need medical treatment

S1 and EHIC
UK pensioners are entitled to free health care in the UK, and don't need an EHIC or equivalent. Just proof of being a UK pensioner.
