Here's the link to my fish recipe. You'll have to scroll down for the ingredients. I actually cook the fish in the air fryer and cook the sauce separately. It's good either way, but we like our fish with crispy skin on it.

A question for the cooks.
When you prepare your panais do you cut out the centre piece?
I do, and that is a tip from my Mother many many years ago.
I haven't found anyone else that does. I think she said it would spoil the taste if it was not done.

I don't unless they have gone woody (late cropping in the spring) but I might just try it to see if there is a difference.

Tonight's supper was toad in the hole accompanied by cauliflower florets done to a Madhur Jaffrey recipe, but adapted to have more tomatoey sauce.
Toad batter made with cornflower, eggs and milk - light, foolproof and delish
Tasty local chipolatas.

Greek Eggplant Skillet Dinner tonight only with a bit of a twist - using the air fryer for the eggplant and tofu part.

If you like aubergine Lori can I suggest you try Aubergine Parmigiana and Aubergine and Green Bean curry, both of which can be found in River Cottage Veg Everyday. Great cook book. The recipes always work.
