Did some one post an easy recipe for sauerkraut recently?
It sounded interesting, so I bought a cabbage, and now can't find it using the search function!!

could someone offer directions to it pls.

I don't recollect a recipe but here is one I have used based on Rick Stein's recipe

Sauerkraut Rick Stein fashion

Finely shred white cabbage. Put in a pan with caraway, cider vinegar, cider, salt and water to cover. Cook for ¾ hour.

[I would also add juniper.]


It is not exactly the same as Choucroute or Sauerkraut but is pretty close and good enough for my tastes.

Thx Exile, I don't think there was cooking involved in the one I saw, which leaves a bit of "crunch" maybe, and I prefer that.
I'll note the Rick stein one, but see if the poster comes back.

Only had it once at a Beer Festival in Hamburg. It came with a pig's foot and both were delicious.

While trying to live cheaply in Paris while on a course there 50+ years ago, a few of us would have lunch at the University and that’s where I first came across it. The server put huge mounds on our plates I only tried it the once and absolutely hated it!

My first batch was jarred yesterday, I'll be "burping" it today, and if I can find another jar will do a red cabbage one later.

I remember looking at a house where the previous tenant had left Sauerkraut fermenting in the cave . . . several years earlier. Even my dodgy sense of smell was overwhelmed.

Strangely I have never eaten it since.
