Sofrito. Very useful for using up roast leftovers, whether beef or pork. Layered slices of cold meat with sliced potatoes, garlic and parsley, salt and pepper, generously doused with olive oil and red wine vinegar, then baked for an hour. Rather tasty :D

I am retired and have never worked so much.
Tonight was Iffits.
One chicken thigh.
One pork shoulder chop.
All chopped into fork sized bits.
Last of the peppers, slightly wrinkled mushrooms, a careless throw of onion and the last two tomatoes.
Frying pan, splodge of sweet chili sauce and mixed into Super U basmati rice.
A large scrunge of ground pepper and try to finish it before falling asleep.
Mme Merlot was lurking but I spotted her, and that was that.
Iam retired as well as you can see by the kitchen I enjoy cooking.

@Spectrum wow that is a veeeerrrry smart kitchen and a knife thrower to boot :lol: . I love the blue lighting. I am waiting on my kitchen man to come and fit new granite worktops ordered last May but due to lock down they are well behind with their work but did say in December it will be Jan/Feb so start removing the old tiles which we've done and made good the dents in the plasterboard :roll: Back to the topic for speed cos we are now repainting the kitchen we have just had a lovely battered fish finger sandwich with tomato ketchup & salad cream 🙀 :D

Beef stew/casserole with dumplings and broccoli. Decided a while ago against having potatoes if we're having dumplings. It's just too filling.

Beef Tagine its supposed to be Lamb but none in the freezer :( the lights are controllable, about a million choices of colours, great for DW to get back to disco fever :crazy: :crazy:

Bigos , The national dish of Poland, Pork belly, spicy smoked sausage, white cabbage, sauerkraut, onions, mushrooms etc.
