Protection does not suddenly switch off after a set time period.
After you receive your booster, your level of protection rises to a peak that is generally after 3-4 weeks. The protection level then stays more or less level - with perhaps a slight decrease over time for another 2-3 months and then starts to diminish over time. Your protection at say 5 months may be around one half of that at the peak but that still means that your body is well set up to protect in most people*. It is just not as well set up as at the peak. If you then get the virus the antibodies will still kick in but there will be fewer of them and so the virus is likely to take a greater hold (= your symptoms will be worse) before the defence systems start to take over. Those defences consist of "old" antibody cells as well as newly manufactured ones.
* Those most vulnerable may not be as well set up.
AS to the vaccines kicking in when you are infected, that as
@Pathca suggests is a misunderstanding.
You get the vaccine and your body will generate antibodies irrespective of whether you will or won't be infected.
It is the antibodies that kick in when you are infected. The vaccine has been and gone - unless you are infected a few days after getting your shot.
