If Fran has changed the habit of a lifetime and recently shown a tendency to become more veggie oriented then make the most of it. You said (somewhere) that you were more veggies inclined yourself so then pursue that direction for both of you.
I don't eat meat and only a minimum of fowl and fish .. I mostly eat vegetables with some lentils, pasta and rice (carnaroli as in risotto).
Explore your up-till-now repressed veggieness

Yes, I am doing that, as always it's the variety that I find lacking. The stew I made the other day and re-heated last night, she eschewed while I tucked in. But all the beef was gone leaving a rich gravy with all the veg still in. I loved it. Will have to back to rice etc. from time to time, but I have her to think of too, she eats so painfully little that it is hard to settle for something she will.

Eggs are definitely off the menu, hers, not mine, in fact it is a joke between us while I am running through the options. Offering eggs usually brings peels of laughter. Baked potato is good though. We only have one between us, sliced longways in half(not really) and she always has the smaller 'half', whereas I have lots of other stuff with it. She doesn't eat the skin either, almost the best part to my taste. Salad is another nono. Another joke shared with our best friends. Joyce and I love salad and we also love watching the faces of John and Fran screw up in horror.
I eat very little meat and much prefer fish and vegetables, or just veg. OH (Who Does No Cooking) complains about chicken/fish/rice pasta and lack of spuds, but I proceed on the basis of 'she who pays the piper calls the tune'.
However, veal was on offer at U yesterday so I'm doing rôti de veau en cocotte in red wine, with garden herbs and carrots (+ shop onion). Accompanied by.... crusty bread!

Today is quiche lorraine made by our local boulangerie which is absolutely delicious and I make a ratatouille to go with it - in fact he's just nipped off to get the quiche as it's never ready before 13:30 and hot out of their oven. We order one every Saturday along with two champetre loaves - love those loaves with the toasty seeds. The quiche gives us Sunday lunch as well unless someone arrives then it's good for sharing I think we may be dabbling in a pot of Haagen Dazs vanilla for pud

As its Autumn/Winter, we went to our Dutch owned farm shop yesterday and stocked up on "Hereford" beef mince and shin for warming stews etc freezer now full, now going through the recipe books

Having read your post I have just refreshed my memory about Tarka Dahl and found a seemingly excellent recipe.
As I love lentils I am eager to try this .. just not straight away as I have been having digestive health problems for the last few weeks and am only at the stage of introducing foods other than 1/2 banana (breakfast) .. plain (undressed) avocado (lunch) .. and some banal stuff in the evening.
Getting there tho .. as I have just eaten a wee bit of roast chicken with a few plain roast vegs. Fingers crossed.
