Cassoulet here! Takeaway from the café as we love cassoulet and they do a generously good one, but wouldn't enjoy it in the restaurant as it's karaoke night.
How do people live without at least one dog in the house?

I love cassoulet! I bought some last week from our butcher/deli opposite.

Vegetarian "shepherd's" pie made with lentils, carrots, peas, lots of onion and garlic, topped with mashed spud and loads of grated cheese and accompanied by the last of our home-grown runner beans. Really yummy !

@MAD87 It's really quick and easy to make, and freezes well. You can use anything you have to hand - fresh veg, tinned from your cupboard, or dried.
Basic quick and easy recipe for 2 people :
200g tin whole lentils (well-rinsed otherwise slimy) or dried
Tinned or fresh mushrooms, sliced
2 large or 4 small carrots, sliced
Handful of frozen peas
1 large onion, chopped
Garlic (or not !)
Seasoning - we add herbes de Provence and Maroccan spices
About 1/2 litre of stock - vegetable, chicken or whatever you like. Remember most stock cubes are salty.
Topping :
Potato
Grated cheese

Sweat the onion until clear, then add carrots to sweat for a few minutes. If not enough oil, don't worry, just add the rest of the vegetables and the stock. Allow to simmer until the carrots are soft, about 15-20 minutes.
In the meantime, cook the spuds, then mash them, adding butter and a little milk.
Put the lentil mixture into an over-proof dish and put the mash and cheese on the top.
Put into a pre-heated oven 190°C and bake for about 20 minutes or until top is slightly browned.

You can put anything you like in the filling : kidney beans, bean shoots, sweetcorn, red/green peppers, even swede ! It's very filling and can be very windy :shock: Once cooked, and all the flavours are absorbed, you wouldn't really know some ingredients were tinned :D
