Thanks for the suggestion Mangetout. I looked them up. Seems they don't have a website, just the cook books. I haven't bought a cookbook in years and years. Also avoid ordering anything that is shipped from the UK (sadly) as there always seems to be some sort of problem getting it.

How did your Beef with ginger and soy turn out?

I love cook books, got dozens and dozens of them! If you have visitors from the UK perhaps they could bring a copy for you.

The beef was great, so simple to make. I did my usual thing, read lots of different recipes and then made it my way. One interesting tip I picked up was cooking the brocoli by pouring boiling water over the florets in a bowl, covering the bowl and leaving them to 'cook' for 10/15 minutes. Cooked to perfection, just slightly crunchy but still warm.

Forgot to add I looked at your fish stew recipe. I shall certainly gave that a try. What fish do you use? Would skin on salmon work do you think?

Good to hear the beef turned out well.

As to the broccoli, I put small raw florets in a microwave bowl, just about cover them with water and microwave them for between 4 and 6 minutes (depending on how much I'm cooking). Give them a good stir, put them in a colander and run some cold water over them to stop the cooking or drain them and put them in a bowl of water with ice to stop the cooking. I can then add them to my stir fry at the very last minute and they stay crunchy.

I will do the same for broccoli salads.

I used trout with skin on it. However, I cooked the trout in the air fryer (skin side up and it comes out nice and crunchy). Cooked the sauce separately in a skillet and added a bit of corn flour to thicken it. Served the sauce on a small bed of cooked basmati rice and placed the crunchy fish on top of that.

I think you can use any fish for this recipe. Salmon would work exactly as the trout did. If using a white fish (and I will do this next time), I think a firm, not too flaky one would be the better choice so it will hold up cooking in the sauce.

Thanks. Strange how we all do things differently. I've never used a microwave to cook anything, even to boil water. I just use it to heat things up, and to heat up my 'wheaty bag' to ease my aches and pains and warm up the bed.

I don't really cook much of anything in the microwave. However, I have learned that it steams veggies very well.

I think a cheese (Cantal doux) and (Branston) pickle sandbag will do me tonight. I found the pickle lurking in the cellar last week, so I'm having a picklefest.
