I do a similar potato dish Sparkle. When you're in the mood for an Indian style dish, it always hits the spot.

Yes on the potato and green bean dish too. We love the combination and do it frequently, especially in Summer.

We also love a cheese, onion & mashed potato pie - it was one of the first things I learnt to make in the cookery class at school. The first lesson was soused herrings - I went to school with the fish wrapped in newspaper - I was mortified when I found I would have to gut and do the necessary - I didn't teacher had to

Tonight is roasted leg of lamb, Greek lemon potatoes and home made tabouli. At least the power hasn't gone out with today's storms.

We both love carbs but OH was finally judged diabetic last October after 3 years of being on the cusp. We’ve had to completely change our eating regime but both of us have lost over 10kgs.
It is really difficult to find enough recipes without the carbs so sometimes we lapse and his ‘numbers’ are always bad afterwards.

Congrats on the weight loss, no small task.

We've reduced our consumption of rice, pasta, bread, crackers, cakes, etc. I miss them all, but it is easier to control the weight without them.

Recently found this site and I've been making my way through it as the recipes are delicious and you could exchange duck for chicken in some of the recipes. I use the tinned confit duck as it's so quick especially if someone drops in and then they get sesame noodles to go with it and if doesn't have to be high in carbs. For us I add chou chinois.
